Snow Crab Kaiseki
In winter, we welcome the arrival of Kanō crab, a celebrated delicacy of Ishikawa and a much-loved local variety of snow crab. Each guest is served the equivalent of one whole, fresh crab, carefully prepared using live crabs caught at the nearby fishing port, accompanied by a selection of seasonal dishes. It’s a special taste of the region we hope you’ll enjoy.
This plan is available from 7th November to 20th March. Please note that due to adverse weather, the period may be subject to change, or crabs from other parts of the Sea of Japan may be used. Thank you for your understanding.
Allergy Policy
At Hanamurasaki, we do our utmost to accommodate guests with food allergies. While we are not able to completely guarantee allergen-free meals, we will take care to prepare dishes without the specified ingredients wherever possible.
We do our best to accommodate food allergies and dietary needs. However, please understand that making significant adjustments to the menu may incur an additional charge, and depending on the ingredients omitted, the number of dishes may be reduced.
Japanese cuisine often relies on a variety of essential seasonings that can be difficult to remove completely. We appreciate your understanding in this regard.
All meals are prepared in the same kitchen using shared equipment, including dishwashers and utensils. While we take great care, trace amounts of allergens may remain due to cross-contact during the cooking process.
Because of this, we are unfortunately unable to guarantee a completely allergen-free environment. For guests with severe allergies, we may not be able to accommodate certain requests out of concern for your safety.
We are happy to accommodate vegetarian, vegan, pescatarian, gluten-free, and other dietary preferences whenever possible. As same-day requests can be difficult to fulfil, we kindly ask that any dietary needs be shared with us when you book your stay.
Please take a moment to review the above. If you have specific dietary concerns and would like to proceed, feel free to contact us by phone or include the details in the comment section of your reservation. We’ll be glad to assist you.
