This culinary experience invites you to enjoy both Japanese sake and fermented foods at 和酒BAR縁がわ (Washu Bar Engawa), hosted by Yusuke Shimoki, the first person in Ishikawa Prefecture to hold the prestigious Sakasho (Master of Sake) certification.
Deeply connected to local sake breweries and the region’s traditional craft of Yamanaka lacquerware, Shimoki guides guests through the depth of sake and the character of the land through quiet conversation across the counter. By savoring the pairing of sake and fermented dishes while listening to the stories of their makers, participants are invited to experience the essence of Japanese food culture.

From the perspective of a certified sake master, Shimoki introduces the appeal of Japanese sake, its relationship with vessels, and the beauty of serving gestures, accompanied by live demonstrations. Guests experience sake not only through taste, but also through movement and presence.

A tasting of three carefully selected local sakes, chosen to complement food. Guests compare aromas, flavors, and the unique character created through fermentation.

Fermented snacks prepared by Japanese chef Naoya Yamazaki, rooted in Ishikawa’s fermentation culture. Each dish is thoughtfully paired to enhance the flavors of the sake.

Born from the need to survive harsh winters, Ishikawa’s fermentation culture tells a story of resilience. Through this experience, guests are invited to explore its history and origins.
Next to the bar is Hasebe Shrine, a small shrine dedicated to the local hot spring. Lush moss and a gently flowing stream within the grounds create a calming atmosphere. We invite you to enjoy a quiet stroll.
